Hey everyone! I thought I’d post this quick recipe for one of my favorite breakfasts to throw together on busy mornings when I need something substantial, delicious Honey Smoked Salmon Fish Tacos! You might be put-off with fish tacos for breakfast, but this recipe includes the sweet and savory Honey Smoked Salmon that I find myself snacking on at all times of the day. This non-traditional breakfast taco is a healthier alternative to a run-of-the-mill breakfast.
Although this recipe yields 1 taco, it is filling and full of nutrients to get you through to lunch! I love making this for breakfast because it’s quick and easy and takes no time at all. If you are trying to stay low-carb, use corn tortillas or throw it in a bowl with quinoa instead!
I N G R E D I E N T S
1 flour tortilla (burrito size)
Honey Smoked Salmon (as much or as little as you’d like)
2 large eggs (scrambled)
1/2 an Avocado
Green onions
Cilantro
Salt & Pepper to taste
Optional Sauces:
Sour cream
Green Chile
Salsa
D I R E C T I O N S
First, prep your ingredients; chop your green onions, cilantro and slice the avocado.
In a pan on medium heat, warm up your tortilla until it’s warm enough to fold.
In a separate pan, set to medium heat and drizzle or spray your choice of oil (we like using avocado oil as the smoke-point is higher than most oils). Crack the eggs and whisk until yolks are broken, and whites are incorporated into the mixture.
With a silicone spatula, push eggs around in the pan, removing them on and off the heat once they begin to cook, and turn and flip consistently. I like making my scrambled eggs like Gordon Ramsay. I find they turn out creamier and cook much faster. The kids like them better this way as well! I don’t follow his recipe exactly, but the technique is what makes all the difference!
Add salt and pepper to taste.
Once the eggs are cooked to your liking and your tortilla is warm, plate your tortilla and push your eggs onto the tortilla.
Next, add your salmon. you can either cook it into your eggs, warm it up on your pan, or add it in as-is.
Garnish with your green onion, cilantro, avocado, and whichever sauce you prefer (I didn’t add a sauce).
Fold your tortilla however it’s easiest to eat and enjoy!
The best part about this recipe is that you can alter it to however you like. You can add or take away any ingredients, cook the eggs a different way, or, if you are vegetarian/vegan, throw some rinsed black beans on there instead. Because my husband is a vegan, and I still eat animal products, I am always trying to find a balance or make our meals easily altered to fit Jon’s needs.
